Formosa Oolong Tea
Oolong teas are allowed to oxidize to varying degrees between green (no oxidation) and black (full oxidation). This tea is commonly served in Chinese restaurants. The large, coarse leaves brew a smooth, mellow, fairly dark cup with light notes of earth and barley. Steep this tea multiple times.
Rinse 1-2 tsp of tea with hot water for 10 seconds before use. Discard rinse water before steeping for 30 seconds at 200°F (95°C). Increase brew time 10 seconds with each additional use.
